A sign at the entrance of the store says it was established in Nishiki Market in 1790. Since then, Yubakichi has been dedicated to yuba (soy milk skin). It is the only shop that both sells and produces yuba in Nishiki Market. They have been able to continue to make yuba here because of Nishiki's groundwater, they say. The current owner is the ninth generation since the establishment of the store, and he still stubbornly maintains the store's traditional handmade methods.

The word "yuba" can be written in Japanese using either a kanji character meaning "wave" or a kanji meaning "leaf." Indeed, the surface of yuba is wavy, while you can also see patterns that look like the veins of a leaf. Yubakichi's Kyoto-style yuba is made using only carefully selected Japanese soybeans and Nishiki's groundwater, and is produced in the traditional way.

When one hears of Kyoto's typical ingredients, yuba immediately comes to mind. It is a representative of Kyoto's culinary culture.
